We are doing well here in the West of Aus with our winter sporting season. Perth Glory (the Perth soccer team in the National league) won the Grand Final this weekend!! Gloooory!! The West Coast Eagles and the Fremantle Dockers (Aussie rules National League) are both in the 8!! The finals season for them doesn't begin until September. Perhaps the West Aussies are having a better year than the White Stockings??? (wont brag too much ... the last few seasons have been very, very shy on success.)

CITRUS GRILLED PLAICE
INGREDIENTS:
4 x 175g (6oz) plaice fillets
1 orange
1 lemon
25g (1 oz) butter or margarine
20ml (2 dessertspoons) fresh
chopped parsley
salt and pepper
METHOD:
1. Finely grate the rind of the orange and the lemon. Squeeze juice from half of each fruit.
2. In a small pan melt the butter and add the rind, juice, parsley and seasoning. Pre-heat the grill.
3. Lay plaice fillets on the grill pan and brush with the citrus mixture.
4. Cook under a medium heat for 4-6 minutes (8-10 if cooked from frozen), continually brushing with the citrus mixture.
5. Serve with boiled or croquette potatoes and vegetables.
Serves 4

And here's one of my favorites:
SURREAL SALMON
2-3 salmon steaks or fillets
1/2 cup 100%pure maple syrup
1/2 cup soy sauce
Liquid Smoke (optional)
fresh cracked black pepper
Mix soy and syrup in a shallow bowl, add one or two drops Liquid Smoke. Place fish fillets in the mixture skin side up, coating both sides well. Marinate fish in fridge for an hour or so. Fish can be broiled in oven but are better on the grill. Before placing fish on the grill, crack fresh pepper over the fillets. Take the fish off the grill a bit early and let sit for awhile...the fish will continue to cook inside.
I know it sounds weird, soy and syrup, but it really works...Bon apetit *g
